Opened Date: April 15, 2007
Glenn Monk was contracted as opening Executive Chef and Food and Beverage Consultant for creation of the design, development and start up of all Food & Beverage related aspects.
Created the general theme and interior design around the offerings at Bonfire Restaurant, as well as its lounge bar, the In-Suite Dining and all catering menus.
Created the positioning line "Desert Region Cuisine" and scripted the menu and menu offerings to reflect the vision and direction.
Full responsibility for all kitchen design and equipment layout as well as responsibility for all purchasing of tabletop Small Operating wares.
Directly involved with the interior design, décor layout of all Food & Beverage areas.
Responsible for the hiring and grooming of a suitable Chef de Cuisine to ensure a smooth and seamless handover post opening.
